Method
- Preheat your oven to 180°C (350°F).

- Cook the pasta shells in boiling salted water until al dente, about 8 minutes, then drain and set aside to cool slightly.

- While the shells are cooking, prepare the filling by mixing ricotta, shredded mozzarella, chopped spinach, minced garlic, and a pinch of nutmeg in a bowl until well combined and creamy.

- Using a spoon or piping bag, fill each shell generously with the cheesy mixture, pressing gently to pack the filling inside.

- Arrange the stuffed shells in a baking dish, then pour marinara sauce over them, ensuring each shell is well coated.

- Sprinkle the top with grated Parmesan cheese for extra flavor.

- Bake uncovered in the preheated oven for 25-30 minutes, until bubbling and golden around the edges.

- Once done, remove from the oven and let it sit for a few minutes until the sauce slightly thickens.

- Serve hot, with a crispy edge on each shell and a gooey, cheesy interior that’s irresistibly sinister-looking.

Notes
For a smokier flavor, use smoked mozzarella or add a dash of smoked paprika to the filling. Ensure shells are cooked just al dente to prevent mushiness during baking.
