Ingredients
  

  • 1 cup chopped tomatoes ripe and seeded
  • 1 cup diced cucumber peeled if desired
  • 1/2 cup finely chopped red onion
  • 1 cup chopped fresh cilantro
  • 2 items citrus fruits (oranges and/or grapefruits) peeled and segmented
  • 1 teaspoon citrus zest from the citrus fruits
  • 1 tablespoon fresh lime juice
  • optional ground black pepper or chili flakes to taste

Method
 

  1. Begin by preparing all your produce: finely chop the tomatoes, dice the cucumber, and finely chop the red onion. Place all in a large mixing bowl.
  2. Add the chopped fresh cilantro to the bowl, scattering evenly across the mixture.
  3. Scoop out the peeled segments of citrus fruits, then chop them into small pieces and add to the bowl. This will give the salsa a juicy, bright flavor.
  4. Sprinkle in the citrus zest, which will amplify the citrus aroma and add a nice burst of freshness.
  5. Pour in fresh lime juice and season with salt. Toss everything gently to combine, ensuring all ingredients are coated evenly.
  6. If desired, add a pinch of ground black pepper or chili flakes for extra spice and complexity.
  7. Let the salsa sit for 5 minutes to allow flavors to meld and the texture to soften slightly, then give it a gentle stir.

Notes

For a sweeter salsa, swap in some diced mango or pineapple in place of or alongside the citrus segments.
