Ingredients
  

  • 2 cups pineapple chunks ripe and juicy
  • 1/2 cup fresh mint leaves roughly chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1-2 tablespoons honey adjust to taste
  • 1/2 cup coconut water or plain water
  • a pinch salt optional

  • Blender
  • Popsicle molds
  • Small saucepan
  • Spoon or funnel
  • Freezer

Method
 

  1. Place the pineapple chunks, chopped mint leaves, lime juice, honey, and coconut water into your blender.
  2. Blend everything until the mixture is completely smooth, about 30 seconds, and you see a vibrant greenish-yellow liquid with tiny mint flecks.
  3. Taste the mixture and add more honey or lime if needed, blending briefly again to incorporate your adjustments.
  4. Pour the mixture into popsicle molds, leaving about 0.5 cm of space at the top to allow for expansion.
  5. Insert sticks into the molds and place them in the freezer, laying flat if possible.
  6. Freeze for at least 4 hours or until the popsicles are fully solid and firm to the touch.
  7. To serve, run the molds briefly under warm water to loosen the popsicles and gently pull them out.
  8. Enjoy immediately for a refreshing, icy treat, or store wrapped in plastic in the freezer for up to two weeks.
