Ingredients
  

  • 6 cups rice cereal like Rice Krispies
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup orange food coloring or natural orange gel coloring

Method
 

  1. Grease a silicone mold or line a baking dish with parchment paper and set aside.
  2. In a large pot over low heat, melt the butter until it’s smooth and begins to smell fragrant.
  3. Add the mini marshmallows to the melted butter, stirring constantly until fully melted and the mixture is smooth and bubbly.
  4. Stir in the vanilla extract and orange food coloring, mixing well to evenly tint the marshmallow mixture with a bright orange hue and a pleasant aroma.
  5. Remove the pot from heat and immediately pour in the rice cereal, folding gently with a rubber spatula until the cereal is fully coated in the orange marshmallow mixture.
  6. Transfer the mixture into your prepared mold or spread it evenly into the lined dish, pressing down gently with a spatula for a compact and even surface.
  7. If using molds, press the mixture into the pumpkin shapes and smooth the tops with a spatula. Allow the treats to set at room temperature for about 20-30 minutes, or until firm.
  8. Carefully remove the pumpkin-shaped treats from the molds or cut into squares if in a baking dish.
  9. Optional: Decorate the pumpkins with small candies or fondant stems for added festive detail, if desired.
  10. Serve these colorful pumpkin Rice Krispie treats at your Halloween gathering or enjoy as a fun, seasonal snack any time.

Notes

For a more natural look, use natural food coloring or tint the marshmallow mixture with pumpkin puree for a softer orange hue.
