- Grease a silicone mold or line a baking dish with parchment paper and set aside.
- In a large pot over low heat, melt the butter until it’s smooth and begins to smell fragrant.
- Add the mini marshmallows to the melted butter, stirring constantly until fully melted and the mixture is smooth and bubbly.
- Stir in the vanilla extract and orange food coloring, mixing well to evenly tint the marshmallow mixture with a bright orange hue and a pleasant aroma.
- Remove the pot from heat and immediately pour in the rice cereal, folding gently with a rubber spatula until the cereal is fully coated in the orange marshmallow mixture.
- Transfer the mixture into your prepared mold or spread it evenly into the lined dish, pressing down gently with a spatula for a compact and even surface.
- If using molds, press the mixture into the pumpkin shapes and smooth the tops with a spatula. Allow the treats to set at room temperature for about 20-30 minutes, or until firm.
- Carefully remove the pumpkin-shaped treats from the molds or cut into squares if in a baking dish.
- Optional: Decorate the pumpkins with small candies or fondant stems for added festive detail, if desired.
