Ingredients
  

  • 2 pounds ripe fresh tomatoes roughly chopped
  • 3 cloves garlic minced
  • 1 bunch fresh basil chopped
  • 2 tablespoons olive oil
  • 1 teaspoon crushed red pepper flakes adjust to taste

Method
 

  1. Heat the olive oil in a large saucepan over medium heat until shimmering and fragrant.
  2. Add the minced garlic to the oil and sauté for about 30 seconds until it becomes aromatic and slightly golden.
  3. Stir in the chopped fresh tomatoes and bring the mixture to a gentle simmer, breaking down the tomatoes with the back of a spoon.
  4. Add the chopped basil, crushed red pepper flakes, and a pinch of salt and black pepper. Stir to combine.
  5. Let the sauce simmer uncovered for 20 to 30 minutes, stirring occasionally, until it thickens slightly and the flavors meld.
  6. Stir in the balsamic vinegar to add a touch of sweetness and depth, then taste and adjust seasoning as needed.
  7. Remove the sauce from heat and serve immediately over cooked pasta or use as a flavorful pizza topping.

Notes

For a smoother sauce, blend slightly with an immersion blender before serving. The sauce improves with a day of rest, allowing flavors to deepen.
