- Bring a large pot of water to a boil, then add the noodles and cook until just al dente, about 8-10 minutes. Drain and rinse with cold water to stop cooking and set aside.
- While the noodles cook, toast sesame seeds in a dry skillet over medium heat until golden and fragrant, about 2 minutes. Remove from heat and set aside.
- Heat 1 teaspoon of toasted sesame oil in the same skillet over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 30 seconds. Stir constantly to prevent burning.
- Add tahini, soy sauce, rice vinegar, and maple syrup to the skillet. Whisk continuously until the mixture is smooth, glossy, and slightly thickened, about 2-3 minutes. Adjust with a splash of warm water if too thick.
- Add the cooked noodles to the skillet with the sauce. Toss gently with tongs or a fork, coating each strand evenly. Cook for another 1-2 minutes until heated through and glossy.
- Stir in your choice of fresh vegetables and cook just until they are slightly tender but still crisp, about 2 minutes. Remove from heat.
- Transfer the noodles to a serving dish. Garnish with toasted sesame seeds and chopped cilantro or scallions. Serve immediately for the best flavor and texture.
Notes
Feel free to customize with your favorite fresh vegetables or herbs. For extra spice, add chili flakes or sriracha to the sauce.
